Ingredients:

2 medium-sized eggplants

2 tablespoons vegetable oil

1 teaspoon cumin seeds

1 medium-sized onion, finely chopped

2 green chilies, finely chopped (adjust to taste)

1 tablespoon ginger-garlic paste

2 medium-sized tomatoes, finely chopped

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 teaspoon coriander powder

1 teaspoon garam masala

1/4 cup chopped fresh cilantro leaves

Salt to taste

 

Instructions:

Preheat your Instant Pot by selecting the “Sauté” function on the control panel. Adjust to the “High” setting.

Once hot, add vegetable oil and cumin seeds to the pot. Allow the cumin seeds to splutter and release their aroma. Add the chopped onions and green chilies. Sauté for 2-3 minutes or until the onions turn golden brown.

Stir in the ginger-garlic paste and cook for another minute. Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.

Cut the eggplants into halves, keeping the stems intact. Place them in the Instant Pot, facing down, on top of the masala mixture. Close the lid of the Instant Pot and make sure the pressure valve is set to the “Sealing” position. Cancel the “Sauté” function and select the “Pressure Cook” mode.

Set the Cook Time to 10 minutes on high pressure. Once the cooking is complete, allow for a natural pressure release for 5 minutes. Then, carefully perform a quick pressure release by turning the pressure valve to the “Venting” position.

Open the Instant Pot and remove the eggplants onto a cutting board. Let them cool slightly.

Using a fork, mash the cooked eggplants, discarding any tough skin. Chop the eggplants finely if desired.

Return the mashed eggplants to the Instant Pot and select the “Sauté” function on the control panel. Cook the mixture for 5-7 minutes, stirring occasionally, until it reaches the desired consistency. Stir in the fresh cilantro leaves and adjust the salt according to your taste preferences.

Serve the Baingan Bharta hot with rice or roti. Enjoy!
