Ingredients:

1 cup rolled oats

1/2 cup whole wheat flour

1/2 cup almond flour

1/2 cup coconut sugar

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon vanilla extract

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted

2 medium apples, peeled, cored, and diced

 

Instructions:

Preheat the Instant Pot using the “Sauté” function. Grease a baking dish with non-stick spray. In a large bowl, mix together the rolled oats, whole wheat flour, almond flour, coconut sugar, ground cinnamon, salt, and baking powder.

In a separate bowl, whisk together the vanilla extract, unsweetened applesauce, and melted coconut oil until well combined.

Pour the wet ingredients into the dry ingredients and stir until a dough forms. Stir in the diced apples. Press the dough evenly into the greased baking dish.

Place the dish on the trivet inside the Instant Pot. Add 1 cup of water to the pot. Close the Instant Pot lid and set the valve to the sealing position. Select the “Pressure Cook” function and set the timer for 20 minutes.

Once the Cook Time is complete, perform a quick release of pressure.

Carefully remove the baking dish from the Instant Pot and let it cool completely before cutting into bars.
