Ingredients:

2 cups mixed berries (strawberries, blueberries, raspberries)

2 tablespoons lemon juice

2 tablespoons granulated sweetener of your choice

1 cup old-fashioned oats

1/4 cup almond flour

1/4 cup chopped nuts (walnuts or almonds)

2 tablespoons melted coconut oil

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

 

Instructions:

In a bowl, combine mixed berries with lemon juice and sweetener. Toss gently to coat the berries and set aside for 10 minutes to macerate. In a separate bowl, mix oats, almond flour, chopped nuts, coconut oil, honey/maple syrup, and vanilla extract.

Stir until the mixture becomes crumbly. Grease a baking dish that will fit into your Instant Pot. Spoon the macerated berries into the dish, spreading them evenly.

Sprinkle the oatmeal mixture over the berries, covering them completely. Place the baking dish on a trivet inside the Instant Pot. Pour 1 cup of water into the Instant Pot. Close the lid, select the “Manual” setting, and cook on high pressure for 15 minutes.

Once done, allow the pressure to release naturally for 5 minutes, then manually release any remaining pressure.

Carefully remove the baking dish from the Instant Pot and let it cool for a few minutes before serving.

Serve warm or at room temperature.
